Grind FineUse a fine grind — consistency like table salt. Fresh-ground is best.

Dose & Tamp18–20g into a clean portafilter. Tamp firmly and evenly at 30lbs.

Pull Your ShotTarget 25–30 seconds for a 36–40ml shot at 93°C.

Enjoy ImmediatelyEspresso degrades fast — savour within 60 seconds of pulling.

Medium-Fine GrindThink coarse sand texture. 25g of coffee per 400ml water.

BloomPour 50ml of 94°C water, wait 30–45 seconds for CO₂ to off-gas.

Pour in CirclesAdd the remaining water in slow circular pours over 3 minutes.

Total Brew: 3:30If it's faster or slower, adjust your grind size accordingly.

Coarse GrindCoarser than sea salt — prevents bitterness and over-extraction.

Add & Steep30g coffee per 500ml water. Pour, stir once, place lid on. Steep 4 mins.

Skim the CrustBefore pressing, skim the foam layer for a cleaner cup.

Press SlowlyApply gentle, even pressure. Pour immediately — don't let it sit.

Coarse GrindUse a coarse grind — 100g per 800ml cold filtered water.

Mix & RefrigerateCombine in a large jar, stir gently, cover, and refrigerate.

Steep 18–24 HoursLonger steep = richer concentrate. Never go beyond 24 hours.

Filter & ServeStrain through a fine mesh or cheesecloth. Dilute 1:1 to serve.
